  • You want to avoid a "nice" prototype that's impossible to produce.

  • 2 to 4 prototypes (2 cycles × 2 variants A/B)

  • 1 recipe + pilot process (small volumes, lab/pilot equipment)

Terms and conditions

Operational consultant in cider and soft drinks: production diagnostics, workshop adjustments, co-piloting, innovation and product development — on site (France / international) or remotely.

 

How does it work?

  1. Call to define the scope + questionnaire (30–45 min): objectives, constraints (workshop, volumes, deadlines), product style, expected deliverables

  2. Proposal/quote: clear scope + schedule + deliverables

  3. On-site or remote, depending on the package.

  4. Deliverables: actionable summary + deliverable files

Client-side prerequisites

  • Access to facilities + availability of key personnel (production/decision-making)

  • Basic data available (analyses, recipes, historical data, packaging constraints)

  • Strict adherence to site hygiene and safety rules

 

Prices, booking, payment

  • Mission confirmed after signed quote and 20% deposit

  • Balance due 30 days after receipt of invoice

  • Prices are exclusive of tax

 

Travel

  • On-site intervention: actual travel expenses (transportation/accommodation/meals) or a fixed price agreed upon in the quote

  • Base calculated with departure from Caen (14)

 

Cancellation / Postponement

  • Free postponement/cancellation up to 30 days in advance.

  • Next: partial billing (reserved time) + expenses already incurred (tickets/hotel)

 

Confidentiality

  • Recipes, data, processes: confidential.

I intervene in your workshop , with your teams and your equipment, to stabilize production , secure critical moments and bring your processes under control (quality, regularity, yields, organization).

 

  • Who is your operational support aimed at?

→ To cider houses and beverage workshops (artisanal, SMEs and start-ups) that want to: make production more reliable, take it to the next level (volume, quality, recruitment), optimize an existing process , or launch a non-alcoholic / low-alcohol apple-based beverage.

 

  • What topics can you address (cider production / apple-based drinks)?

→ Typically: clarification & stabilization , fermentation control (drifts/stops), carbonation, filtration, equipment settings , hygiene & cleaning, workshop organization, bottling / packaging, loss reduction, repeatability, control plan and follow-up routines.

  • Diagnostics, workshop adjustments, co-piloting: what's the difference?

  Diagnosis + action plan: understand quickly, prioritize, decide (what to do / what to stop) and frame the projects.

→ Workshop settings: correct on the field, stabilize, standardize, train on the job.

→ Co-piloting: supporting you over the long term during a critical period (season, launch, increase in volume).

  • Do you only operate in France?

No. I work in France and internationally as needed (production, optimization, product development). The goal: to come, define the scope, execute, and deliver.

 

  • What needs to be prepared before your visit (audit / workshop intervention)?

Ideally: your objectives (quality, volume, deadlines), workshop constraints, batch history (successes/failures), available analyses, current recipes/protocols, and pain points (instability, losses, deviations, bottlenecks). The more readily available the baseline data, the more precise the intervention.

 

  • Can you intervene in an emergency (unstable batch, fermentation drift, overpressure, lack of staff)?

→ Yes, depending on my availability and the level of risk. We start with a quick triage (20–30 min) to assess the situation (safety, compliance, impact on planning), then I propose an immediate action plan: securing the batch, stabilizing the process, identifying control points, and deciding whether to "recover/block/rework." Next, we choose the appropriate format: remote support (close monitoring over 24–72 hours) and/or on-site intervention if necessary.

  • Are you working on non-alcoholic apple-based beverages (stability, microbiology, process)?

→ Yes. I support the development and safety of non-alcoholic / low-alcohol apple-based drinks: product stability, infusion, choice of ingredients, non-alcoholic fermentation, control of microbiological risks, choice of stabilization barriers compatible with your workshop.

 

  • Do you work exclusively with cider?

→ No: apple-based drinks, with or without alcohol (sparkling, fermented, flavored, etc.).

 

  • Do you primarily work on-site?

→ Yes. My core value lies in being on the ground: in direct contact with the product, the equipment, and the team. I can also manage a service provider if you are using a subcontractor.

 

  • Can you help with sourcing (apples / ingredients / crops / equipment)?

→ Yes, if it's useful to the project: securing resources and choosing the right equipment based on your volumes, constraints, and product style. The goal isn't to buy "more," it's to buy "just right."

 

  • How do you manage confidentiality and ownership of recipes?

I work within a clear framework: your data (recipes, figures, processes) remains with you. If necessary, we will formalize a confidentiality agreement. The goal is for you to be able to move forward with peace of mind, without unnecessarily exposing your know-how.
